Beta-glucans are water-soluble, locked inside chitin cell walls that only hot water will open. Triterpenes and sterols won’t dissolve in water at all — they need alcohol. Run one solvent and you retrieve half the mushroom.
We run both. Hot water first, then alcohol, then the two are recombined. It costs more per kilo and it takes longer, and we do it anyway.

That practice is why so much of this category tests high in starch and low in everything that matters.
